Disney Food and Wine recipes

Doug and  I have become big fans of Disney’s Food & Wine festival. They sell cookbooks with some of the recipes – and we’ve bought all of them – so we decided to try to get through as many of the recipes as we could. Many of them are out of our comfort zones, so we figured it’d be good. Everything has turned out great!

Seared Sea Scallop with Kumara Red Curry Puree and Apple Radish Salad

NZ Marketplace. One of my all-time fav Food & Wine dishes. We’ve done this a couple times.

Potato Leek Waffles with Braised Beef

Belgium Marketplace. This was one of my fav dishes at Food & Wine ’13. Our version turned out quite good too!

Kalua Pork Sliders with Pineapple Chutney and Spicy Mayo

Hawaii Marketplace – we didn’t end up making our own bread with this one. But we have made this several times too. So good. Recipe: http://www.disneyfoodblog.com/2012/08/15/epcot-food-and-wine-festival-recipe-kalua-pork-sliders/

Shrimp Taco with Purple Cabbage

Mexico Marketplace. We’ve made this twice and it’s really delicious. We used a dutch oven to fry the shrimp in.

Trick n Chicken Curry

Terra Marketplace. We totally cheated and used regular chicken. The sauce was really good though!

Pão De Queijo – Brazilian Cheese Puffs

Brazil Marketplace. I have made this a couple times and they are SO good. The tapioca flour can make these filling – I found that eating too many filled me up fast in a bad way. Also, gluten-free! Escargot

I think I would have liked this better if we had made the tiny brioches. But we didn’t. We did have bigger brioches, but I liked the small ones we had the escargot in at Food & Wine. The escargot I got canned on Amazon. They tasted good, but strong on the parsley. Recipe: http://diningatdisney.com/recipe-escargots-persillade-en-brioche/

Vegetarian Moussaka

Greek Marketplace. This was SO good. The recipe is fairly involved (since there are a bunch of different things to make – the bechamel sauce, cooking the eggplant, making the “meat” sauce) and time consuming. We made it for Christmas eve and it took way longer than anticipated. But it was absolutely delicious. And we’d totally use veggie crumbles again – in this casserole-like dish, they were indistinguishable from meat. Highly recommend this recipe. That’s all we’ve done! When we do another batch of recipes, I’ll post them in a separate blog!
